Burrito Bowl Casserole

This recipe was originally created when we were in college and needed cheap, easy, and healthy food that could easily be reheated. It has remained a staple in my cooking routine because it's just that: easy, cheap, healthy and so so sooooo delicious. It is pure comfort food. PLUS! You can use literally any veggies you have on hand so it's a great waste free meal. This is of course perfect for dinner, but would also be great as a meal prep for lunches during the week too. You can also throw so fried eggz on top and call it breakfast! *** Easy and worthwhile additions: - Avocado - Plain Greek Yogurt or Sour Cream - Cilantro - More Lime - Hot Sauce

Ingredients

2 cups rice
1 tbsp ghee or butter
1 packet liquid rice seasoning (I used Dozens Cousins)_
1 lb meat (beef, chicken,
1 lb cheese (cheddar, pepper jack,
2 cups veggies (I like onions, pepper, tomatoes, mushrooms, but you can use anything
1 lime
2 10oz cans/containers of beans (I like black and

Directions

Preheat oven to 425F

Cook the rice according to the package instructions, BUT add in the ghee or butter and rice seasoning packet before the rice if you're using them. Set aside once cooked. *You can also use bone broth in place of the water for extra nutrients, protein, and flavor!

Cut all of your veggies and sauté them until softened. Season with salt n pep to taste. You don't want to take it too far because they'll continue to cook in the oven. Add the juice of one lime once it's done cooking. Set aside.

Assemble! Place a large baking dish inside a rimmed baking sheet, cuz spillage. Then add 1/2 of the veggies to the dish, then ALL of the rice, then meat, then cheese, then veggies, then the rest of the cheese!

Bake at 425F for 20-30 minutes or until the cheese is nice and melty and browning. Allow it to cool for 5-10 minutes, top with your optional toppings, and...
