The other day I couldn’t fall back to sleep after being up with my daughter and I was day dreaming about peanut butter and jelly and I had this epiphany, what if I made a pb&j nut and seed granola. So this newest rendition was born. The combination of peanut butter coated nuts and the sweet jam and apricots is something truly special.

Ingredients

10 oz almonds
10 oz cashews
1 cup coconut flakes
1/2 cup hemp hearts
1/3 cup peanut butter
1/2 cup maple syrup or honey
1/4 cup olive oil or melted coconut oil
1/2 cup chopped dried apricots or other dried fruit
pinch of salt
1/2 cup berry jam or other preserve

Directions

1.
Chop almonds and cashews by hand or in a food processor.

10 oz cashews

Combine the chopped nuts and remaining ingredients (except jam and apricots) in a large bowl until thoroughly mixed

10 oz cashews
1/2 cup hemp hearts
1/3 cup peanut butter
1/2 cup maple syrup or honey
1/4 cup olive oil or melted coconut oil
pinch of salt

Bake at 350F for 25-30 minutes

Remove from the oven and add dollops of jam to the granola and gently spread it out to create a thin layer. Top with the apricots.
1/2 cup berry jam or other preserve
1/2 cup chopped dried apricots or other dried fruit
5.
Bake for another 10 minutes or until jam is bubbly.

If you want thick clusters allow it to cool on the baking sheet. If you want it crumbly add it to a bowl and mix every so often while cooling.
7.
Store in an airtight container in the fridge (since it has a higher moisture content I like to keep it in the fridge vs. on the counter)
