Peanut Butter and Jelly Granola Bars

Everything you love about a peanut butter and jelly, but turned into a portable and delicious granola bar! These are soft, chewy, and delicious!

Ingredients

1 cup peanut butter
2/3 cup berry jelly
1/2 tsp salt
2 cups oats
1/4 cup finely chopped nuts (pecan, walnuts, peanut, almond, macadamia, etc)
1/4 cup shredded coconut flakes unsweetened
1/4 cup mini chocolate chips
1 Optional teaspoon vanilla extract

Directions

1.
Combine the peanut butter, jelly, salt, and optional vanilla extract to create a paste.

Add in the oats, chopped nuts, shredded coconut, and chocolate chips. Combine until fully mixed. (use dairy free chocolate chips to make these dairy free!)

1/4 cup finely chopped nuts (pecan, walnuts, peanut, almond, macadamia, etc)
1/4 cup shredded coconut flakes unsweetened
1/4 cup mini chocolate chips

Line a 9x9 square dish with parchment paper. I personally cut the parchment, crumble it all up into a tight ball, and then unfurl and press into the baking dish - this just helps it form to the shape of the dish.

Add the mixture to the dish and lightly wet the back of a measuring cup or your hand and press the mixture down to compress and even it out.
5.
Refrigerate for at least 60 minutes, but the longer they sit the better!

Cut into 12 pieces by first cutting in half both ways, and then cutting two halves into 3 pieces. Watch the video if that doesn't make sense!

I personally would try to eat these within a week.
